The Quarantine cookbook: 5 Easy Recipes To Make at Home

Have you finished binge-watching your favorite series on Netflix? Running out of things to do during quarantine? Are you too lazy and just want to chill out, eat and have fun? How about trying easy recipes you can make during the quarantine? We have 5 easy recipes for you to make while at home! It’s super easy, fun to make, and definitely very filling to eat! You won’t need to spend too much time looking for ingredients because they are insanely easy to make, and very light in the pocket!


 

  1. One-Pan Baby Back Ribs 

You’ll need: 

1 rack baby back ribs, halved

2 teaspoons cumin

2 teaspoons chili powder

1 teaspoon pepper

2 teaspoons garlic powder

2 teaspoons paprika

2 teaspoons salt

1 cup BBQ sauce (285 g)

3 corns, husked and halved

10 stalks asparagus

4 tablespoons olive oil

2 teaspoons salt

½ teaspoon pepper

Preparation:

  1. Preheat the oven to 275°F (140°C)

  2. Place the half racks on a baking sheet lined with foil. Sprinkle evenly with cumin, chili powder, pepper, garlic powder, salt, and paprika. Rub in the seasoning evenly on both sides.

  3. Cover with the foil and bake for 2 hours.

  4. Increase oven temperature to 500°F (260°C)

  5. Remove the ribs from the foil and place on a baking sheet.

  6. Spread the bbq sauce evenly on the top.

  7. Place the corn on one side of the pan, and the asparagus on the other. Drizzle the olive oil, salt, and pepper evenly over the veggies, and rub the seasoning in evenly.

  8. Bake for 10 minutes. Rest the ribs for at least 10 minutes.

  9. Slice and serve! Enjoy!

 

      2. Spinach and Cheese Mini Calzone

You’ll need:

16 tablespoons frozen spinach, thawed

8 tablespoons ricotta cheese

4 slices mozzarella cheese, cut in half

1 teaspoon garlic, chopped

3 tablespoons butter, melted

1 tablespoon parmesan cheese

1 teaspoon fresh parsley

For the egg wash:

  • 1 egg

  • 1 tablespoon water

Preparation:

  1. Preheat the oven to 400˚F (200˚C).

  2. Cut pizza dough into 8 sections on a floured surface.

  3. With one section, roll out dough until flat and circular.

  4. Layer one slice mozzarella cheese, two tablespoons spinach, and 1 tablespoon ricotta.

  5. Fold one side of dough up and over ingredients, and seal calzone by crimping the edges together.

  6. In a small bowl, mix together melted butter, parmesan, garlic, and parsley.

  7. Place calzone on a parchment-lined baking sheet. Apply egg wash to the outside of the calzone and brush with garlic butter.

  8. Bake calzones for 15-20 minutes or until golden brown.

  9. Share with your family and friends!

 

         3. 3-Ingredient Chili-glazed Salmo

You’ll need:

4 oz salmon(115 g), 3 fillets

½ cup chili sauce(130 g)

¼ cup fresh scallions(25 g), chopped

Preparation:

  1. Preheat the oven to 400°F (200˚C).

  2. In a bowl, mix together the salmon, chili sauce, and the scallions.

  3. Place the fillets on a baking tray lined with parchment paper.

  4. Spoon any leftover sauce on top of the salmon.

  5. Bake for 12-15 minutes, until the salmon is cooked but still tender.

  6. Enjoy eating!

 

         4. Butter Parmesan Corn

You’ll need:

6 half ears corn, cleaned, husked

2 tablespoons butter, softened

½ cup parmesan cheese(55 g), grated

Salt, to taste

Pepper, to taste

Preparation:

  1. Preheat the oven to 375ºF (190ºC).

  2. Coat each ear of corn in a thin layer of butter and roll in the parmesan cheese to coat

  3. Place corn in a square baking dish and sprinkle with salt and pepper.

  4. Bake for 25 minutes.

  5. That’s it!

 

         5. Cheesy Garlic Broccoli

You’ll need:

3 crowns broccoli

1 ¾ cups shredded cheddar cheese(175 g)

3 cloves garlic, crushed

Salt, to taste

Pepper, to tast 

Preparation:

  1. Preheat the oven to 375ºF (190ºC).

  2. Spread out broccoli in a medium rectangular casserole dish.

  3. Stir the garlic and cheddar cheese together in a separate bowl.

  4. Sprinkle the cheese evenly over broccoli and add salt and pepper to taste.

  5. Bake for 25 minutes.

  6. Enjoy!
